I have been blessed to have Nancy Coles as my personal fitness trainer for years, therefore when she told me she was going to school to add Holistic Nutritionist to her wide range of knowledge, I was thrilled.
Before she worked with me on nutrition, I felt that I was eating a healthy diet with lots of vegetables, fruit and choosing fish or lean white meat as my source of protein. Although these items are still in my diet, what I learned from Nancy was that some foods support my health and some things do not.
Nancy made the transition incredibly easy, by eliminating a few things at a time, while at the same time giving me guidance as to the right foods to replace the ones eliminated. My biggest fear was that I would be hungry and not have enough choices to satisfy my appetite. Now I rarely go hungry and I am always prepared with snacks.
Nancy first had me keep a food diary, which was very telling. Even though I was eating fairly healthy, I was experiencing really bad headaches almost daily. What she discovered was that I was going 6-7 hours between meals at times and therefore my blood glucose was way out of whack. She taught me to eat small snacks in between meals to level off my blood glucose levels and thus no more headaches other than the odd stress head ache.
I was also experiencing stiff sore joints and not able to work out to my full potential because of it. Changing my eating habits and nutrition has greatly improved how I feel and also given me renewed energy. I have recently taken up riding lessons again something which I thought at the age of 62 was not in the cards for me anymore.
